So I made this bacon veggie dip for the super bowl party.
It was good. Really good.
The problem was that my friends went a little overboard in the food department. We had brats, burgers, stuffed mushrooms, roasted veggies, 4 different dips, cheese and crackers, and brownies shaped like footballs. Yep. A Lot of food. Not nearly enough people. We only ate about 1/4 cup of this dip. If that.
Fine. I see how it is. I’ll just eat this dip for dinner Monday night. I won’t be mad about it.
And i’ll do it while watching The Following. Have you seen it? Holy cow. It’s intense. You should check it out.
OK, this dip? The veggies are sauteed in bacon grease. BACON GREASE. Need I say more?
Creamy Bacon Veggie Dip
8 ounces cream cheese, softened
8 ounces sour cream
4 slices bacon
½ medium sweet onion, chopped
½ red pepper, chopped
½ green pepper, chopped
¾ cup chopped mushrooms
½ to ¾ bag of spinach
1/3 cup blue cheese (could also use gorgonzola, feta, or goat cheese)
Preheat oven to 375.
In a large skillet, fry bacon. Set aside on a plate covered with paper towels to drain. Leave the grease in the skillet.
On medium heat, sauté onions and peppers until soft, about 5 minutes. Add salt. Add the mushrooms and sauté for another 5 minutes. Add the desired amount of spinach to the veggies and cook until wilted.
Chop (or use scissors) the bacon into small pieces.
In a large bowl, using a hand mixer/stand mixer/ or spoon to mix the cream cheese and sour cream together. Fold in the veggie mixture. Then fold in the bacon and blue cheese (or cheese of choice).
Spoon mixture into an oven safe dish and bake for 20 minutes or until the top is golden brown.
Serve with crackers, pita chips, or veggies.
